  • 1 cup dried lentils rinsed and drained
  • 1 can 14.5 oz diced tomatoes, with juices
  • 2 medium carrots diced
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon red pepper flakes adjust to taste
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

  • In a large pot, heat olive oil over medium heat.
  • Add the chopped onion and carrots, sautéing until the onion is translucent (about 5 minutes).
  • Stir in minced garlic, cumin, smoked paprika, and red pepper flakes. Cook for 1 minute until fragrant.
  • Add the lentils, diced tomatoes (with juices), and vegetable broth. Bring to a boil.
  • Cover and simmer for 25-30 minutes, or until lentils are tender.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh parsley if desired.
