Ingredients
- 1 cup dried lentils rinsed and drained
- 1 can 14.5 oz diced tomatoes, with juices
- 2 medium carrots diced
- 1 medium onion chopped
- 3 cloves garlic minced
- 4 cups vegetable broth
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- ½ teaspoon red pepper flakes adjust to taste
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Steps
In a large pot, heat olive oil over medium heat.
Add the chopped onion and carrots, sautéing until the onion is translucent (about 5 minutes).
Stir in minced garlic, cumin, smoked paprika, and red pepper flakes. Cook for 1 minute until fragrant.
Add the lentils, diced tomatoes (with juices), and vegetable broth. Bring to a boil.
Cover and simmer for 25-30 minutes, or until lentils are tender.
Season with salt and pepper to taste.
